Beverage Engineering
Beverage is a kind of quantitatively packaged product that can be directly drunk or mixed or brewed with water in a certain proportion, and the ethanol content (mass content) is not more than 0.5%. In addition to providing water, beverages contain different amounts of sugar, acid, milk, sodium and other nutrients in different kinds of beverages, so they can quench thirst, refresh, supplement nutrition and energy.
According to the final state of the product, it can be divided into three categories: liquid beverages, beverage slurries, or solid beverages.
There are many kinds of beverages, which can be divided into alcoholic beverages and non-alcoholic beverages according to the production process.
1) Alcoholic beverages refer to beverages for people to drink with ethanol (alcohol) content of 0.5% - 65% (v/v), which are made from sorghum, barley, rice or fruit by fermentation or distillation, including various fermented wines, distilled wines and prepared wines.
2) Non alcoholic beverages, also known as soft drinks, are processed from fruits, vegetables, plant roots, stems, leaves, flowers or animal milk by pressing or soaking extraction, including soft drinks, hot drinks and milk. According to different components, non-alcoholic beverages can be roughly divided into the following categories:
